Upside down pineapple cake




INGREDIENTS:

1 Cup all purpose flour

1tsp baking pwd

1 large egg

1/4 th cup milk

1/4 cup sugar(white)

1/4 cup butter

3/4 tsp vanilla essence

salt-pinch

Topping:

1 1/2 tbsp butter

1/4 cup dark brown sugar

7 pineapple slices(i used tin slices)

7 cherries(red or green)

Procedure:

Start by making caramel topping first.Melt butter in a pan and add brown sugar on medium low till the sugar melts and foams for a 2mins.Pour into baking pan(grease the pan before).Over this carael arrange pineapple slices in single layer according to your design and in center of each pineapple place cherry.keep aside.

Mix flour,baking pwd and salt.In a seperate bowl ,use an electric mixer to beat the sugar and butter together until light.Add eggs one at time and vanilla essence combine well.

Add slowly dry ingredients to above mix alternating with milk.Donot overbeat.

Pour batter over fruit layer .Bake in preheated oven at 325 f for 40 mins.till a toothpick inserted into a cake comes out clean.turn cake out into a platter serve at room temperature..
